So this chili….This chili has been the talk of the fricken town around here for the past week. Mike has put in an order for a whole “Home Depot pallet full of chili”. Plus I’ve been getting heart eye emojis and a lot of “omg this chili” texts since he’s even eating it for lunch every single day. My sisters trainer wants to recipe, all of my clients want the recipe.. I’m not sure if I accidentally slipped some crack in the damn thing or what but everyone loves it.
So. Here it issss.. “Magic Crack Chili”. That might have to be its official name….Just went and added it to the title..
So not only is this deliciousss but it’s healthy. I mean theres corn..but it’s a vegetable… vegetable=healthy. duh.
You can serve it with some shredded cheese and tortilla chips like I did.. little less health…or on it’s own. Either way, it’s great.
And I haven’t even told you the best part! As if raving reviews and deliciousness weren’t enough.. This is all done in a slow cooker. No fussing over the stove for hours, just throw it in and go. Prep time is minimal so you can pull this together before you go to work or head out for the day.
Side note: I have the sickest slow cooker in the whole world. Its shiny and black and has diamond facets and just insane. As much as I love to do the actual cooking on my own, I love any excuses to pull this thing out. Cmon. Look at it.
This recipe makes alllottt of chili. If you need to feed a small army or hungry boyfriend like mine, its perfect. Mike ate this for a whole week and there still leftovers that I threw in the freezer.
So you have been forewarned… this chili may cause an addiction. Eat at your own risk.
- 1 1/2 lb boneless skinless chicken thighs
- 1 cup uncooked quinoa
- 1 onion, chopped
- 6 celery stalks, chopped
- 1 jalapeno, de-seeded and chopped finely
- 6 garlic cloves, minced
- 4.5oz can diced green chiles
- 15 oz can cannelloni beans
- 2 cups frozen corn
- 4 cups chicken broth
- juice of 1/2 lime
- 1 tbsp cumin
- 1/2 tsp oregano
- 2 bay leaves
- 1 tsp sea salt
- 1/4 tsp black pepper
- 1 tsp cilantro
- Place all ingredients in slow cooker. Chicken thighs at the bottom and other ingredients placed on top.
- Cook on high for 4 hours or low for 6-8 hours.
- When chicken is cooked, shred and put back into slow cooker. Stir to combine.
- Serve with cheese, sour cream, avocado, salsa.. any toppings you like!
